As I had some strawberries left from the last cake that I made, I wanted to make something with them, and nothing more easy, fast and delicious then cupcakes. Cakes with yogurt or cream cheese are always moist, mild and the gentle sourness makes them not so sweet. Fresh strawberries add interesting texture and more flavour to these cupcakes. <p><strong><span style="color: #888888;">Strawberry Yogurt Cupcake</span></strong></p>
<p><span style="color: #888888;"><span style="text-decoration: underline;">Ingredients</span>:<br />
(± 12 cupcakes)</span></p>
<p><span style="color: #888888;">115g butter, softened<br />
110g white sugar<br />
1 teaspoon vanilla extract<br />
2 eggs, small<br />
250g all-purpose flour<br />
1 teaspoon baking soda<br />
1/2 teaspoon baking powder<br />
1 cup plain yogurt<br />
sliced strawberries (you may choose the quantity, just make sure not so much)</span></p>
<p><span style="color: #888888;"><span style="text-decoration: underline;">Directions</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Preheat the oven to 350oF/180o C.<br />
In a large bowl, cream together the butter, sugar and vanilla until light and fluffy. Beat in the egg until smooth. In another bowl, combine the flour, baking soda, and baking powder; stir one-third of the flour mixture into the batter alternately with half of the the yogurt. Repeat this sequence, end with the flour. Gently fold in the sliced strawberry with a spatula. Divide the batter into the prepared 12 paper cups.<br />
Bake for 35-40 minutes in the preheated oven, until a toothpick inserted into the cake comes out clean.</span></div>

I&#8217;ll probably try this recipe one more time but I&#8217;ll make only one recipe. But the most important was that my friends that I love came buy, and also other relatives. Now I just need to get used to my new age and to wait for the next one.</span></p>

<p><strong><span style="color: #888888;">Strawberry Cake</span></strong></p>
<p><span style="color: #888888;"><span style="text-decoration: underline;">Ingredients</span>:</span></p>
<p><span style="color: #888888;">3/4 cup strawberry puree, room temperature (follows)**<br />
1/4 cup milk, at room temperature<br />
6 large egg whites, room temperature<br />
1 Tbsp vanilla extract<br />
2 1/4 cup cake flour, sifted<br />
1 3/4 cup sugar<br />
4 tsp baking powder<br />
1 tsp salt<br />
12 Tbsp unsalted butter (1 1/2 sticks), softened (not melted)</span></p>
<p><span style="color: #888888;"><span style="text-decoration: underline;">Directions</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Preheat oven to 350 degrees and prepare two 8 inch pans: line outside with heavy duty foil (I used Bake Even strips) and spray inside with baking spray with flour.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">In small bowl, combine puree, milk, egg, vanilla and mix with fork until well blended. In bowl of stand mixer, add sifted flour, sugar, baking powder and salt and mix to combine. Continue beating at slow speed and add butter. Mix until combined and resembling moist crumbs.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Add liquids and beat at medium speed for about 1 minute or until full and evenly combined. Stop mixer to scrape down the sides of the bowl and hand beat for 30 more seconds. Divide the batter evenly among the pans and smooth tops.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Bake for about 25 minutes or until a toothpick inserted in the center comes out clean (time will vary). Let cakes rest in pan for about 10 minutes and turn out onto wire racks. Let cakes cool completely (about 2 hours).</span></p>
<p style="text-align: justify;"><span style="color: #888888;">**Strawberry puree<br />
24oz frozen organic strawberries, thawed*</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Thaw frozen strawberries in whatever form (sliced, whole, etc) and in whatever container/bag you have them in. Pour into a fine strainer placed over a bowl and let sit. Lightly toss the strawberries occasionally to remove any pockets of excess liquid. Reserve the liquid for another use or discard. Place strawberries in a food processor or blender and puree.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">* You most certainly can use non-organic and you can use fresh strawberries if you don’t have a stash of frozen strawberries in your freezer. Just hull, slice and toss with a teaspoon or two of sugar and cover. Let them sit at room temperature for a couple of hours, or until nice and juicy. Place strawberries in a food processor or blender and puree.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Use leftover puree to fill the cake or fold into the frosting, if desired. It’s also fabulous spooned over ice cream… and eaten straight with a spoon.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Yields: Approx 1 1/4 cup strawberry puree</span></p>

<p style="text-align: justify;"><span style="color: #888888;">Melt the chocolate in double boiler, dip the strawberries into the hot chocolate mixture. Use a wooden pick to dip the bonbon. Place on aluminum foil to dry into the refrigerator.</span></p>

<p><span style="color: #808080;">Last weekend it was my cousin&#8217;s Karen birthday, and came me the idea to make a little surprise party and as now I am trying new recipes I decided to make the cake instead of buying. So I went in search of some cake recipe and the first one that called my attention it was this that I found in the famous site of <a href="http://technicolorkitcheninenglish.blogspot.com/2008/08/triple-lemon-chiffon-cake-with.html" target="_blank">Patricia</a>. The result was not what I expected, because I think that I had some problems in the execution… hehe. But it is not the most important because it was very fun to make it with my sister, my cousin and my aunt. I think that everybody liked, because I had to leave the party earlier and I did not ask, but someone told me that the cake finished in the same hour.</span></p>

<p><span style="color: #808080;"><strong>Triple lemon chiffon cake with strawberries</strong></span></p>
<p><span style="color: #808080;"><span style="text-decoration: underline;">Ingredients</span>:</span></p>
<p><span style="color: #808080;">For the cake:</span></p>
<p><span style="color: #808080;">8 eggs, separated<br />
¼ cup (60ml) vegetable oil<br />
2 tablespoons freshly squeezed lemon juice<br />
1 tablespoon grated lemon zest<br />
1/3 cup (80ml) water<br />
½ teaspoon cream of tartar<br />
1 ½ cups (300g) sugar<br />
1 ¾ cups (245g) cake flour<br />
½ teaspoon baking soda<br />
½ teaspoon salt</span></p>
<p><span style="color: #808080;">Lemon white chocolate mousse:</span></p>
<p><span style="color: #808080;">100g white chocolate, coarsely chopped<br />
¾ cup (180ml) heavy cream<br />
1 egg white<br />
1 tablespoon sugar<br />
zest of ½ lemon<br />
1 tablespoon lemon juice<br />
1-1 ¼ cups sliced strawberries</span></p>
<p><span style="color: #808080;">Lemon buttercream:</span></p>
<p><span style="color: #808080;">3 egg whites<br />
¾ cup (150g) sugar<br />
¼ cup (60ml) freshly squeezed lemon juice<br />
9oz/252g unsalted butter, room temperature</span></p>
<p><span style="color: #808080;">Decoration:</span></p>
<p><span style="color: #808080;">candied lemon peel and/or fresh strawberries </span><span style="color: #808080;">and/or white chocolate<br />
</span></p>
<p><span style="color: #808080;"><span style="text-decoration: underline;">Make the cake</span>:</span></p>
<p style="text-align: justify;"><span style="color: #808080;">preheat the oven to 180ºC/350ºF. Line the bottoms of three 9-inch cake pans with round of parchment or waxed paper but do not grease the pans.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">In a medium-large bowl, whisk together the egg yolks, oil, lemon juice, zest and water.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">In a large mixer bowl, whip the egg whites with the cream of tartar on medium speed until frothy. Gradually add ½ cup (100g) of the sugar and continue to beat until soft peaks form.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Sift the flour, remaining 1 cup (200g) sugar, baking soda and salt into a very large bowl. Whisk gently to combine. Make a well in the center, pour the egg yolk mixture, and stir to make a smooth paste. Add one-fourth of the beaten egg whites and fold in to lighten the batter. Fold in the remaining whites. Divide the batter among the 3 prepared pans.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Bake for about 16 minutes or until a cake tester or wooden toothpick inserted in the center comes out clean. Transfer to wire racks and let the cakes cool completely in their pans. To unmold, run a blunt knife around the edges to release – I did not need to do this, since the cakes pulled out from the edges as soon as they began to cool. Invert to unmold; carefully peel off the paper liners.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Make the filling:</span></p>
<p style="text-align: justify;"><span style="color: #808080;">melt the white chocolate with ¼ cup of the heavy cream in a double boiler or in a small metal bowl set over a pan of very hot water. Whisk until smooth. Remove from the heat, add the lemon juice and mix well. Let cool to room temperature.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">When it has cooled, beat the remaining ¾ cup heavy cream with the lemon zest until firm peaks form. In a clean bowl, whip the egg white with the sugar until you get a firm meringue.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Fold the beaten egg white into the white chocolate cream, then fold in the whipped cream until just blended – err on the side of undermixing. Refrigerate until needed.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Now, the buttercream:</span></p>
<p style="text-align: justify;"><span style="color: #808080;">place the egg whites in a large mixing bowl and set the mixer up with the whip attachment.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">In a nonreactive saucepan, heat the sugar and lemon juice, stirring to dissolve the sugar. Bring to a boil and cook, without stirring, until the syrup reaches the soft ball stage, 115ºC/238ºF on a candy thermometer.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Turn the mixer to medium-low speed and slowly add the syrup to the egg whites, taking care not to pour it onto the beaters. Beat on medium speed until the meringue cools to body temperature.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">With the mixer on medium-low, gradually add the butter several tablespoons at a time. Beat until a smooth buttery frosting forms.</span></p>
<p style="text-align: justify;"><span style="color: #808080;">Assembling the cake:</span></p>
<p style="text-align: justify;"><span style="color: #808080;">place one layer on a cake stand or serving plate. Top half the filling and place half the amount of strawberry slices over the mousse. Place another cake layer, spread the remaining filling over it and top with the strawberries. Top with the third cake layer. Frost the top and sides with the buttercream. Decorate with candied lemon peel and/or fresh strawberries.</span></p>

<p><span style="color: #808080;"><strong>Strawberry Coffee Cake</strong></span></p>
<p><span style="color: #808080;"><span style="text-decoration: underline;">Ingredients</span>:</span></p>
<p><span style="color: #808080;">Crumble Topping:</span></p>
<p><span style="color: #808080;">1/2 cup flour<br />
1/4 cup sugar<br />
</span><span style="color: #808080;">1/4 cup unsalted butter</span><span style="color: #808080;"> (stick form is necessary), cold from the fridge<br />

<p><span style="color: #808080;">To make crumble topping, sift the sugar and flour together in a large bowl. Place the margarine in the center of the bowl and sprinkle a little of the sugar and flour mixture over it. Place all 10 fingers on the stick and start crumbling it by making cat-kneading gestures with your fingers so the margarine turns into little pea sized bits. If you need a visual, refer to this little fella. Keep crumbling until the stick is completely whittled down.<br />
Keep the bowl of crumbles in the fridge until you’re ready for it.</span></p>
<p><span style="color: #808080;">Strawberry Coffee Cake:</span></p>
<p><span style="color: #808080;">2 cups flour<br />
1 cup sugar<br />

2 tsp. cinnamon<br />
2 tsp. vanilla extract<br />
1 cup milk<br />
2 eggs<br />
1/4 cup unsalted butter, melted<br />
3 cups strawberries, sliced</span></p>
<p><span style="color: #808080;"> -Sift the first four ingredients together in a bowl and set aside<br />
-Whisk the milk, eggs, vanilla, and melted margarine together in a bowl.<br />
-Add the mix of wet ingredients to the bowl of dry ingredients.<br />
-Beat together with a handheld mixer until well incorporated.<br />
Pour into a pre-greased 12×8 pan. Arrange the sliced strawberries on top of the batter. Sprinkle the crumble toppings.<br />
Bake at 350F for 35-45 minutes.</span></div>
