I wanted to change a little bit and I decided to make a pear cake, and I can only say that this cake is wonderful, very very good. As the recipe called for Asian pears I ended up using them, I had never eaten them before, and I found the consistency and taste totally different, but if you don’t find Asian pears I believe that any type of pear will be perfect too. After a lot of searching, I chose this recipe, and it was the perfect choice, the cake is delicious, soft and smells great because of the combination of all the spices. The recipe is approved and recommended to all. The only change I would do, is to cut the pears into cubes and mix it into the cake batter, as in this apple cake, because the recipe tells to put a fruit layer only in the middle of the cake, and for me it needed more pear on the cake. But even so the cake is delicious.

Asian Pear Cake

Ingredients:

3 Asian pears
2 oranges
2 1/4 cups white sugar
3 cups all-purpose flour
1 cup canola oil
4 large eggs
1 tbsp. baking powder
2 1/2 tsp. vanilla extract
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. all spice powder
1/4 tsp. ground ginger

Directions:

Preheat your oven to 350F. Slice the pears and set aside.
In a large bowl or stand mixer, beat the eggs until they’ve lost their orange color and have become a bit paler, about 1 min. Add to the mix the juice of two oranges and the zest from one and whisk lightly. Now add the flour, spice mix, baking powder, sugar, vanilla and salt and mix completely.
Once those ingredients are incorporated, slowly add the oil as you mix the batter. The result will be rather thick, sticky, and perfect for what is next.

Grease and flour a 10-inch tube pan. Take about a third of the batter mixture and lay down a nice coating on the bottom of the pan. This will actually be your top, so you want to make sure you’ve made a thick layer all the way around the base of the pan. Lay pear slices on top of your batter layer. Add another layer of batter and another layer of pear slices. You should get between 2-3 layers of pears. The final layer should be batter.

Place your pan in the oven and bake for approximately 90 min. To check for doneness, insert a toothpick in the middle and remove it. It should come out clean when the cake is done. Remove finished cake from the oven and leave it in its pan for at least 30 min. on a rack or other tray. Once sufficiently cool, you can turn it out onto a plate or simply leave it in its pan and cut slices from it. In either case, be sure to work slowly. Sprinkle slices with confectioners sugar and enjoy!

mac and cheese

This recipe is for those lazy days, it’s simple to make and don’t take long to cook. So, if you need a tasty, simple and easy meal, this recipe is perfect.

Baked Mac and Cheese

Ingredients:

400gr elbow macaroni (al dente)
900g heavy cream
8 tbsp shredded parmesan
300gr shredded mozzarella
100gr shredded cheddar
250 g fried bacon
1/2 tsp ground nutmeg
salt and black pepper
chopped parsley

Directions:

Preheat oven to 350 degrees F. In a large pot of boiling, salted water cook the pasta to al dente.
Mix all the ingredients. Season with salt, parsley and pepper. Fold the macaroni into the mix.
Bake for 30 minutes.

apple-muffin

Yummy, when I think about this recipe, I can smell the apple and cinnamon being baked, delicious. This recipe was adapted from the book Le Cordon Bleu of muffins, and for the time being it is one of the best recipes of muffins that I tested. Delicious!

Apple Muffins

Ingredients:
6 muffins

75g self-raising flour
50g all-purpose flour
1/2 tsp baking powder
2/3 tsp ground cinnamon
1/3 tsp ground nutmeg
4 tbsp sugar
50g melted unsalted butter
1 tbsp honey
1 small egg
55ml milk
1 small apple, cored, peeled, chopped

1/4 tsp ground cinnamon to sprinkle
1/2 tsp sugar para to sprinkle

Directions:

Preheat oven to 180°C. Prepare your ingredients. You will need 6 medium muffin pans. Silicone muffin pans are wonderful to use as they don’t need greasing. Alternatively, line the pans with paper muffin cases.
Sift the flour, baking powder, cinnamon and nutmeg together into a large bowl. The baking powder acts as a raising agent and will help give the muffins a light texture. Stir in the sugar, apples until well combined.
Whisk together the butter, honey, eggs and milk until well combined. Blending the wet ingredients before adding them to the flour mixture makes it easier to evenly combine the two.
Add the milk mixture and the apples to the flour mixture and stir with a large metal spoon until just combined. It is important that the ingredients are only just combined. If the mixture is over-mixed, the cooked muffins will have a tough texture. Spoon the mixture evenly into the muffin pans and sprinkle the sugar and cinnamon misture. Bake the muffins in preheated oven for 20 to 25 minutes or until golden and cooked through. To test if they are cooked, insert a skewer into the centre of one – if it comes out clean, it is ready. Serve warm or at room temperature.

Cinnamon Rolls

I was crazy about Cinnamon Rolls when I lived in Canada, at McDonalds I always asked for the “Fondant à la cannelle”, it was delicious, but  unhappily we don’t have it here in Brazil. When I came back to Brazil in the end of 2008 I was soon searching a recipe of these rolls, and I found this one in some site that I don’t remember, but it is delicious, and if it is not the same recipe that I used to eat at least it is very close. DELICIOUS!

Cinnamon Rolls

Ingredients:

Dough:

200g cups (or more) all purpose flour
16g of sugar
3g of salt
30g margarine at room temperature (or butter)
90g of whole milk
32g of egg (1 small egg)
4g of dry yeast
20g of worm water

Filling:

25g brown sugar
4g ground cinnamon
1 tbsp margarine at room temperature
pinch of nutmeg

Glaze:

15g cream cheese at room temperature
20g of sugar
35g margarine at room temperature
1/2 teaspoon vanilla extract

Directions:

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, margarine, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 16  x 3,5 inch rectangle. Spread margarine all over dough. Mix sugar, cinnamon and nutmeg and sprinkle over buttered dough. Beginning at the 16-inch or 3,5 side(it depends of how many rolls do you want) , role up dough and pinch edge together to seal. Cut into  slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake in preheated oven at 180ºC/350ºF degrees for about 20 minutes or until nicely browned.

Meanwhile, mix butter, sugar, and vanilla and spread over hot rolls.
