They were delicious, and a funny thing was that, when I made the cookies, I left them on the table, then I realized that my father had eaten almost everything but he didn&#8217;t tell me if he liked the recipe. Then, at dinner my sister asked me about the cookies and I told her that they ran out, so she asked me to bake more, it was then that my father listened and asked me surprised: &#8220;It was you who baked it?&#8221;, I said yes, and he said: &#8220;No no, you bought it&#8221;&#8230;hehe. I thing that the cookies were so good that he didn&#8217;t believe that it was me who baked it&#8230;haha. So, you can imagine how good the cookies are, and It’s worth baking it. </span></p>

<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Ingredients</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">250g sugar<br />
500g cornstarch<br />
100g all-purpose flour<br />
200g unsalted butter<br />
2 eggs<br />
Vanilla extract<br />
Guava paste</span></p>
<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Directions</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Preheat oven to 350°F and place rack in center of oven. Line a baking sheet with parchment paper.<br />
Sift cornstarch, sugar and flour together. Add the lightly beaten eggs, vanilla extract and blend in the butter. Knead we<span style="color: #888888;">ll. Let stand ten to fifteen minutes. Roll the dough into balls about 1 inch in diameter. Place the balls on parchment lined cookie sheets. Press down with your thumb to make a small well in the center of the cookie and </span></span><span style="color: #888888;">fill  with guava paste. Do not press too hard or the cookie will fall apart. Or you can use cookies cutters and spread guava paste in</span><span style="color: #888888;"><span style="color: #888888;"> one cookie and top with another  cookie.</span><span style="color: #888888;"><br />
Bake for 10 to 15 minutes or until slightly firm. Allow to cool for a few minutes on the cookie sheet t</span>o firm up before moving them to a wire rack to finish cooling.</span></p>

I made these cookies around Christmas and I got the recipe <a href="http://technicolorkitcheninenglish.blogspot.com/2009/12/cinnamon-candy-canes.html" target="_blank">here</a>. This is one of those cookies great for an afternoon tea, perfect with a cup of coffee, tea or even hot chocolate. They are delicious, simple and super easy to make. The only problem is that for me the cinnamon flavor was very soft, the next time I will increase a little, because I love cinnamon. </span></p>

Makes 40 </span></p>
<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Ingredients</span>:<br />

<p style="text-align: justify;"><span style="color: #888888;">¾ cup + 1 tablespoon (184g) unsalted butter, room temperature<br />
1 cup + 1 ½ tablespoons (218g) caster sugar<br />
1 teaspoon ground cinnamon<br />
2 ½ cups + 2 ½ tablespoons (375g) all purpose flour<br />
1 egg<br />
1 egg yolk<br />
1 egg white, lightly beaten with a fork<br />
granulated sugar, for sprinkling</span></p>
<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Directions</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Place butter, sugar and cinnamon in a food processor and process until smooth. Add the flour, egg and egg yolks and process until a smooth dough forms – my processor wasn’t strong enough to process the dough, so I prepared it on my Kitchen Aid using the paddle attachment. Lightly knead the dough, divide in two parts and wrap each one in plastic wrap; refrigerate for 30 minutes or until firm.</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Preheat the oven to 180°C/350°F; line two large baking sheets with baking paper.<br />
Roll 1 leveled tablespoon of the dough to form a log (roughly 10cm/4in long). Carefully bend the top to form a candy cane and place onto prepared sheets, 2.5cm (1in) apart. Repeat with the remaining dough. Brush the canes with the egg white and sprinkle over the sugar. Bake for 12 minutes or until golden. Allow to cool.<br />
Store the cookies in an airtight container for 2-3 weeks.</span></p>

<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Ingredients</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">500g all purpose flour<br />
200g unsalted butter<br />
1 cup milk<br />
1 tbsp baking powder</span></p>
<p style="text-align: justify;"><span style="color: #888888;">250g guava paste (for the filling)</span></p>
<p style="text-align: justify;"><span style="color: #888888;">1 egg white (beaten, to brush the top)<br />
2 cup crystallized sugar (to coat)</span></p>
<p style="text-align: justify;"><span style="color: #888888;"><span style="text-decoration: underline;">Directions</span>:</span></p>
<p style="text-align: justify;"><span style="color: #888888;">Slice the guava paste into small strips and reserve. Grease two 12&#215;16 inches pan. Pre-heat oven to 350°F.<br />
Mix the dough ingredients, the flour, butter, milk and baking powder. Mix until smooth. Divide the dough in two and reserve one half in a plastic bag. Roll out one half on a floured surface into a rectangle (not to thin). Cut into smaller rectangles (3&#215;2 inches), put a guava paste strip in the center and role up the dough and pinch edge together to seal. Brush the top of the biscuits with the egg white and coat only the top with the crystallized sugar. Bake for 35 to 40 minutes (or until the bottom of the biscuits turn brown). Repeat the process with the other half.</span></div>
