The other day I saw this recipe and I kept it in my memory, but yesterday I was with my mother at the supermarket and she saw some Limes that she wanted to buy,  and automatically I remembered the bread and asked if she wanted me to bake it, and she liked the idea. The recipe is very simple, quick and easy, but for me it’s not really a bread or a cake,  for me it was something in the middle. But it is perfect with a cup of coffee in the afternoon, it is super tasty, and smells great, delicious. In the recipe you can use either cherry preserves or jam, I used the cherry preserves, but next time I’ll cut the cherries into small pieces, to distribute them better into the bread and I believe that with the  cherry jam it should be even more delicious.

Cherry Lime Bread

Ingredients:

2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup sugar
1/4 cup butter, melted and cooled
1 large egg
3/4 cup fresh lime juice
2 tsp lime zest
1 tsp vanilla extract
3/4 cup cherry preserves/jam (not cherry pie filling)

Directions:

Preheat oven to 375°F. Lightly grease a 9×5-inch loaf pan.
In a medium bowl, whisk together flour, baking powder, baking soda, salt and sugar
In a large bowl, whisk together sugar, melted butter and egg until smooth. Add in lime juice, lime zest, vanilla and whisk until smooth. Add in flour mixture and stir until no streaks of flour remain.
Pour half of the batter into the prepared loaf pan. Carefully spread cherry preserves in a layer over the batter. Pour remaining batter into an even layer on top of the preserves.
Bake for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Let bread cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.

honey breadOriginally called “pão de mel” (honey bread) in Brazil, where it’s a local favorite, this dark chocolate covered little dense spice honey cake will amaze your taste buds. It’s great with a hot cup of coffee, tea, chai or just by itself. You can also use a dulce de leche filling, and make them even more delicious. Oh my, I can’t get enough…I love honey bread. Just a reminder, you’ll probably need to reduce the recipe or otherwise you’ll have lots and lots of breads, so you should do half or even a third. But one thing I’m sure, you’ll love it.

Brazilian Honey Bread
(96 individual breads)

Ingredients:
(if you need, use a “oz” conversion calculator on the internet)

490 g brown sugar
400 ml water
5 eggs (separated)
700 g all purpose flour
5 g ground cloves
5 g ground cinnamon
25 g chocolate powder
20 g baking soda
10 g baking powder
250 ml milk
300 ml honey

Syrup:

200 ml water
10 g brown sugar
3 cinnamon sticks
10 g cloves

Icing:

1.5 kg milk chocolate
1 kg semi-sweetened chocolate

Dulce de leche for the filling

Directions:

For the syrup, put all the ingredients in a saucepan in low heat, for about 15min. Drain it and let it cool.

Beat egg whites until it forms stiff and firm peaks, reserve.

Preheat oven 350°C. Butter and flour a 12 X 16inch pan, or use individual pans.

Mix with a whisk, the cold syrup, with the sifted flour, ground cinnamon, ground cloves, chocolate powder. Add the baking soda dissolved into the milk and the sifted baking soda. Add the egg yolks one by one and whisk well. Gently fold the egg whites into the batter. Pour the batter in the pan and bake for approx. 40 minutes, or until a toothpick inserted in the cake come out clean. Let it cool. Pour the syrup over the cake. Cut the cake into squares.

For the icing, melt the chocolates in a microwave oven or in a double boiler and cover the breads. Use a fork to dip the bread. Place on aluminum foil to dry into the refrigerator.

cheese bread

This recipe is from Camila’s blog and I had never tried before, but I found it an excellent idea, it is super delicious and above all it is very easy to make. So, recipe approved and posted.

Brazilian Cheese Bread in the Sandwich Grill

Ingredients:

1 cup of milk
1/2 cup of vegetable oil
3 eggs
1/2 tsp salt
5 tsp corn starch
1 cup grated parmesan cheese
1 cup sweet starch

Directions:

Put all the ingredients in the order in the blender, and mix it. Preheat the sandwich grill and grease it a little. Then, spoon into the grill. If you want you can put some ham, cheese, tomato, nutella or jam together.

Ham and Cheese Roll

This is another recipe that I discovered in the same magazine of the Hot Dog Sausage Bread, and it is as good as. The recipe said to only make one big roll but I decided to make several rolls of different sizes and shapes, and I also changed the filling, and I alternated between, ham, mozzarella, olive, tomatoes and cream cheese. It was a party, I served them while they were still hot and I think that in less than 20 minutes they were all gone, and I preferred the big one because they had more filling…haha. Delicious!

Ham and Cheese Roll

Ingredients:

Dough:

15g fresh yeast
1 tbsp sugar
1 cup worm milk
2 eggs
2 tbsp margarine
Salt
4-1/2 cup all-purpose flour

Filling:

100g ham chopped
100g mozzarella chopped
1 tomato chopped
Oregano
Olives
Cream cheese

Egg wash
Parmesan cheese

Directions:

In a mixing bowl, dissolve yeast in sugar. Add the milk,eggs, margarine, salt and the flour, mix together and beat until smooth and allow to rest covered for 1 hour or let rise until doubled. After turn out the dough onto a floured surface and roll into several rectangles(size of your choice). Spread the filling over the dough and roll up. Place, on a greased baking sheet and let it rise again till doubles. When dough is ready, brush top with egg wash and sprinkle some parmesan cheese.
Bake in preheated oven at 180ºC/350ºF for 35 minutes or until golden brown. Remove from pan to a wire rack. Serve warm.

Hot Dog Sausage Bread

This recipe I discovered in a magazine and adapted to my taste. Since the first time that I made it in  my grandmother’s house, I was obliged to pass the recipe for all my aunts and all time that I go to her house they ask me to bake it:). And another day that I made this bread at my house, I was forced to take the bread off  the oven before the right time, because my sister did not wanted to wait anymore… hahaha. So, you can notice that this bread is delicious.

Hot Dog Sausage Bread

Ingredients:

Dough:

1 cup warm whole milk
2 tbsp cream cheese
2 tbsp butter
Salt
3 cups all-purpose flour

Filling:

300g hot dog sausage chopped
100g mozzarella chopped
1 tomato chopped
1 cup cream cheese
Pepper

1/4 cup parmesan cheese
Egg wash

Directions:

In a mixing bowl, dissolve yeast in milk. Add the cream cheese, butter, salt and the flour, mix together and beat until smooth and allow to rest covered for 1 hour or let rise until doubled. After turn out the dough onto a floured surface and roll into a rectangle. Spread the cream cheese and the rest of the filling over the dough and roll up. Place, on a greased baking sheet and let it rise again till doubles. When dough is ready, brush top with egg wash and sprinkle some parmesan cheese.
Bake in preheated oven at 180ºC/350ºF for 35 minutes or until golden brown. Remove from pan to a wire rack. Serve warm.

Cinnamon Rolls

I was crazy about Cinnamon Rolls when I lived in Canada, at McDonalds I always asked for the “Fondant à la cannelle”, it was delicious, but  unhappily we don’t have it here in Brazil. When I came back to Brazil in the end of 2008 I was soon searching a recipe of these rolls, and I found this one in some site that I don’t remember, but it is delicious, and if it is not the same recipe that I used to eat at least it is very close. DELICIOUS!

Cinnamon Rolls 2

Cinnamon Rolls

Ingredients:

Dough:

200g cups (or more) all purpose flour
16g of sugar
3g of salt
30g margarine at room temperature (or butter)
90g of whole milk
32g of egg (1 small egg)
4g of dry yeast
20g of worm water

Filling:

25g brown sugar
4g ground cinnamon
1 tbsp margarine at room temperature
pinch of nutmeg

Glaze:

15g cream cheese at room temperature
20g of sugar
35g margarine at room temperature
1/2 teaspoon vanilla extract

Directions:

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, margarine, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 16  x 3,5 inch rectangle. Spread margarine all over dough. Mix sugar, cinnamon and nutmeg and sprinkle over buttered dough. Beginning at the 16-inch or 3,5 side(it depends of how many rolls do you want) , role up dough and pinch edge together to seal. Cut into  slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake in preheated oven at 180ºC/350ºF degrees for about 20 minutes or until nicely browned.

Meanwhile, mix butter, sugar, and vanilla and spread over hot rolls.

Hungarian Salty Slices

After baking so many sweet recipes, I decided to bake something salty, and nothing better than a stuffed bread. This recipe I found in Naninha’s blog, and its really worth baking it.

Hungarian Salty Slices

Ingredients:

Fermentation:

25g active fresh yeast
1 tbsp sugar
1/4 cup warm milk (110 to 115 degrees F)
1/2 cups all-purpose
flour

Dough:

1/4 cup warm water
75g butter in room temperature
100g mashed potatoes
1 large egg
1 tsp salt
350g all-purpose flour

Filling:

150g chopped cooked ham
150g mozzarella chopped
100g olives chopped
150g cream cheese
2 tbsp dry parsley or oregano chopped
Salt, pepper and
parmesan cheese to taste

Directions:

Preheat the oven to 180ºC/350ºF.
In a mixing bowl, dissolve yeast in sugar. Add the
warm milk and the fermentation flour, mix together and allow to rest covered for 15 minutes or let rise until doubled. Add the rest of ingredients and beat until smooth. Stir in enough flour to form soft dough. Turn out dough onto a floured surface and roll into a 16 x 12 inch rectangle. Spread the cream cheese and the rest of the filling over the dough.
Roll up and cut into 1 inch rounds. Place, on a greased baking sheet and let it rise again till doubles. When dough is ready, brush top with egg wash and sprinkle some parmesan cheese.
Bake for 30 minutes or until golden brown. Remove from pan to a wire rack. Serve warm.
