Banana Cake (Gluten and Dairy Free)

I know everyone will love this recipe. This banana cake is super soft, delicious, easy to make and has no gluten or dairy. This recipe is super quick, just put everything in a blender, blend it and bake it. I’ve bake it several times in the same week. Yummy, I’m sure you’ll love it!!





Banana Cake (Gluten and Dairy Free)

Ingredients
  1. 2 large bananas (300g)
  2. 2 large eggs
  3. 1 1/2 cups oats
  4. 2 tbsp sugar, honey, xylitol, etc.*
  5. 1 tbsp baking powder
  6. 1 tbsp coconut oil
Instructions
  1. Preheat the oven to 350°F. Grease a small cake pan and set aside.
  2. In the blender, blend the oats until they are fine and begin to look powdery, like flour. Reserve. Blend the eggs and bananas until you have a very creamy mixture. Add the oats and the rest of the ingredients; coconut oil, sugar, baking powder, and blend it just to combine.
  3. Pour dough into cake pan and bake it in the preheated oven for about 25 to 30 minutes or until the toothpick test comes out clean.
Notes
  1. * You can use oat bran instead of regular oats.
  2. * Use the sugar of your preference, it can be any type, such as refined sugar, xylitol, coconut sugar, or stevia. You can also omit the sugar.
